ETC… This unique, direct-trade microlot comes from the farm of husband and wife team, Roger & Isabel, at Finca Las Mercedes in Matagalpa, Nicaragua. Lovingly known as “Tutti Fruity” by Isabel, this coffee achieves its pronounced tropical fruit tasting notes through its unique method of processing in which a percentage of the lot is sorted immediately after harvest and entire coffee cherries are placed into fermentation tanks for carbonic maceration. The coffee cherries are fermented twice then dried for a month as a natural processed coffee along with the rest of the harvested lot.
